Ingredients
The following ingredients have 6 Servings
- 3 slice turkey bacon
- 2 teaspoon canola oil
- 1 pound Brussels sprouts, trimmed and cut in half
- 2 clove garlic, minced
- 1/4 cup water
- 3 ounce soft goat cheese
- 2 tablespoon fat-free milk
- 1 tablespoon grated Parmesan cheese
- 1/4 teaspoon salt (optional)
- 1/4 teaspoon black pepper
- Paprika for sprinkling
Instruction
- Coat a large skillet with cooking spray. Over medium-high heat, cook turkey bacon 5 to 7 minutes, or until crispy. Remove from skillet, let cool, and dice; set aside.
- In the same skillet over medium heat, heat oil; saute brussels sprouts and garlic 5 minutes, or until lightly browned. Add water, cover, and continue cooking 5 minutes, or until brussels sprouts are fork-tender.
- Meanwhile, in a small saucepan over low heat, combine goat cheese, milk, Parmesan cheese, salt, if desired, and pepper. Heat until cheese is melted and mixture is hot. Pour sauce over brussels sprouts, stir in bacon, and heat 1 to 2 minutes, or until hot. Sprinkle with paprika before serving.
