Ingredients

The following ingredients have 4 Servings
  • 3 cup chopped cooked turkey
  • 10.5 oz can Cream of Chicken Soup
  • 1 cup sour cream
  • 1 3/4 cup shredded cheddar cheese, divided
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 2 cups chicken broth
  • 1 1/3 cups milk
  • 1 cup uncooked rice
  • 2 1/2 cups chopped fresh broccoli
  • 2 sleeves round butter crackers
  • 1/2 stick butter, melted

Instruction

  • Pre-heat oven to 350°F. Spray a 9x13 casserole dish with cooking spray and set aside.
  • In a large bowl, whisk together the soup, sour cream, 3/4 cup cheese, pepper, and garlic powder.
  • Whisk in the chicken broth and milk.
  • Stir in the rice, turkey, and broccoli.
  • Pour into the prepared casserole pan. Cover with foil and bake in the oven for 50 minutes.
  • When casserole has about 10 minutes left to cook prepare the cracker topping. Place crackers in a sealable bag and crush. Pour butter over crackers and toss to coat them evenly.
  • Open the oven, remove foil, and sprinkle the remaining cheese over the casserole. Top with crackers and bake uncovered for an additional 15-20 minutes.
  • Remove from oven and let the casserole sit for 3-5 minutes and serve.
