Ingredients

The following ingredients have 2 Servings
  • 2 large plum tomatoes (seeded and diced)
  • 4 scallions (sliced)
  • 1 tablespoon butter
  • 4 tablespoons cottage cheese
  • 1 tablespoon fresh parsley (chopped)
  • Salt and freshly ground pepper to taste
  • 6 fresh eggs (see notes)
  • 2 tablespoons half-and-half
  • Pinch of salt
  • 2 tablespoons butter

Instruction

  • Remove the eggs from the refrigerator about 30 minutes ahead of time to allow them to come to room temperature.
