Ingredients
The following ingredients have 2 Servings
- 2 large plum tomatoes (seeded and diced)
- 4 scallions (sliced)
- 1 tablespoon butter
- 4 tablespoons cottage cheese
- 1 tablespoon fresh parsley (chopped)
- Salt and freshly ground pepper to taste
- 6 fresh eggs (see notes)
- 2 tablespoons half-and-half
- Pinch of salt
- 2 tablespoons butter
Instruction
- Remove the eggs from the refrigerator about 30 minutes ahead of time to allow them to come to room temperature.
