The following ingredients have 1 Servings
  • 24 jalapeno peppers (medium size)
  • 1½ cups cheddar cheese (shredded)
  • 3 eggs (slightly beaten)
  • 2 cups breadcrumbs
  • 6 cups vegetable oil for frying

Instruction

  • Wearing plastic gloves, cut the stem end off peppers with a paring knife. Carefully remove seeds and white membrane.
  • Stuff peppers with cheese. 
  • Heat oil in a deep fryer or large pot to 375 degrees.
  • Place eggs in a small bowl.
  • Place breadcrumbs in a shallow pan.
  • Drop 4 peppers in eggs and toss to coat.
  • Using a fork, lift 1 pepper at a time out of the eggs, shaking off excess.
  • Drop the egg-coated pepper into the breadcrumbs and toss to coat
  • Place breaded pepper on a sheet pan.
  • Repeat with remaining peppers.
  • When all peppers are coated, let them sit to dry for 15 minutes.
  • With a slotted spoon, place peppers, a few at a time, into the hot oil.
  • Fry for 2 to 3 minutes, until golden.
  • Transfer fried poppers to a platter lined with paper towels to drain.
  • Repeat with remaining peppers.
  • Serve immediately.
