Ingredients
The following ingredients have 6 Servings
- 1 medium onion (chopped)
- 2 ribs celery (diced)
- 3 cloves garlic (minced)
- 2 tablespoons olive oil
- 2 chicken breasts (cut into bite-size pieces)
- 1 teaspoon poultry seasoning
- 1 ½ cups uncooked long grain rice
- 3 cups chicken broth
- 1 tablespoon fresh parsley (chopped)
- 12 dashes Tabasco
- 14.5 ounces diced tomatoes with juice
- 8 ounces tomato sauce
Instruction
- Heat 1 tablespoon of the olive oil in a large pan over medium-high heat.
- Add the onion, celery and garlic and cook until tender.
- Remove from pan and set aside.
- Add the remaining tablespoon of oil and chicken.
- Sprinkle poultry seasoning over chicken in pan.
- Cook, stirring frequently, until chicken is no longer pink and has a light brown color.
- Add reserved onion mixture back to the pan with the chicken.
- Add all remaining ingredients and stir well to combine.
- Bring mixture to a boil, then reduce heat to low, cover and cook 25 to 30 minutes or until most of the liquid is absorbed and the rice is tender.
