Ingredients

The following ingredients have 6 Servings
  • 1 medium onion (chopped)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 2 chicken breasts (cut into bite-size pieces)
  • 1 teaspoon poultry seasoning
  • 1 ½ cups uncooked long grain rice
  • 3 cups chicken broth
  • 1 tablespoon fresh parsley (chopped)
  • 12 dashes Tabasco
  • 14.5 ounces diced tomatoes with juice
  • 8 ounces tomato sauce

Instruction

  • Heat 1 tablespoon of the olive oil in a large pan over medium-high heat.
  • Add the onion, celery and garlic and cook until tender.
  • Remove from pan and set aside.
  • Add the remaining tablespoon of oil and chicken.
  • Sprinkle poultry seasoning over chicken in pan.
  • Cook, stirring frequently, until chicken is no longer pink and has a light brown color.
  • Add reserved onion mixture back to the pan with the chicken.
  • Add all remaining ingredients and stir well to combine.
  • Bring mixture to a boil, then reduce heat to low, cover and cook 25 to 30 minutes or until most of the liquid is absorbed and the rice is tender.
