- ¼ cup coriander leaves (/cilantro (15 to 18 grams))
- 1 cup onions ((fine chopped, 1 large, 160 grams))
- ¾ inch ginger (sliced)
- 2 garlic cloves (sliced)
- 1 to 2 green chilies ((slit, adjust to taste))
- 2½ tablespoons oil ((divided))
- 1 cup tomatoes ((fine chopped, 2 medium, 250 grams))
- ¾ teaspoon garam masala
- 1 teaspoon salt
- 1½ cups water ((more if needed))
- 1 tablespoon ghee (or unsalted butter)
- 2 dried red chilies
- 1 to 2 garlic cloves (chopped)
- ⅛ teaspoon hing (/asafoetida)
