Ingredients

The following ingredients have 4 Servings
  • 2 cups cauliflower, cooked
  • 1 egg
  • 1/4 cup parsley leaves
  • 1/4 cup green onions, only the white part
  • Salt and pepper, to taste
  • 1/2 cup parmesan cheese
  • 1 cup breadcrumbs (panko)
  • Oil to fry

Instruction

  • Put the cauliflower, egg, parsley, green onions, salt, pepper and parmesan in a food processor. Pulse until you get an even mixture.
  • Put the mixture in a medium-sized bowl and add the panko; mix till they combine.
  • Divide the mixture into 10 equal parts and form balls using your hands. Afterwards, lightly press to obtain disk-formed nuggets.
  • Heat enough oil over medium heat until it reaches 350° F. Fry the nuggets until they are golden on both sides, which should take 2-3 minutes. Place on a plate with paper towels.
  • Serve with your favorite sauce.
