Ingredients
The following ingredients have 4 Servings
- 1 tbsp olive oil
- 1/2 cup onion (diced)
- 1/2 cup green bell pepper (diced)
- 2 tbsp tomato paste
- 1/4 cup gluten free chicken broth
- 2 cloves garlic
- 1 cup cherry tomatoes (halved)
- 1 tsp oregano
- 1 tsp cumin
- 1/2 tsp salt (or to taste)
- 1/2 tsp pepper (or to taste)
- 12 oz cauliflower rice
- 2 tbsp cilantro (chopped for garnish (optional))
Instruction
- Add the oil to a cast iron skillet or similar pan and saute the onion and green bell pepper for four minutes on a medium heat.
- Next, add the tomato paste, chicken broth, garlic, cherry tomatoes, oregano, cumin, salt & pepper and stir well.
- For frozen cauliflower rice follow instructions on the bag. For fresh cauliflower rice, remove onion and tomato mixture from the pan. Saute cauliflower in skillet on medium heat until tender, about 5-7 minutes.
- Return all ingredients to skillet and stir to combine. Warm for 1 minute, garnish with cilantro and serve.
