Ingredients
The following ingredients have 4 Servings
- 1 tablespoon extra virgin olive oil
- 1 onion, chopped
- 2 leeks, chopped
- 1 head of Cauliflower
- water or vegetable stock
- a few sprigs of fresh thyme
- salt & pepper
- lemon juice & zest {optional}
Instruction
- Start by adding olive oil to a large pot over medium to high heat.
- Saute the onion and leeks till tender, then add garlic until fragrant.
- You can now add the Cauliflower florets to the pot.
- Cover with water or vegetable stock and bring to a simmer.
- Once the Cauliflower is tender, season with fresh thyme, salt & pepper.
- I like to use an immersion blender to puree the soup.
- You can also use a blender or food processor.
- Just be sure to work in batches.
- Stir in lemon juice and zest.
- Serve hot!
