Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon extra virgin olive oil
  • 1 onion, chopped
  • 2 leeks, chopped
  • 1 head of Cauliflower
  • water or vegetable stock
  • a few sprigs of fresh thyme
  • salt & pepper
  • lemon juice & zest {optional}

Instruction

  • Start by adding olive oil to a large pot over medium to high heat.
  • Saute the onion and leeks till tender, then add garlic until fragrant.
  • You can now add the Cauliflower florets to the pot.
  • Cover with water or vegetable stock and bring to a simmer.
  • Once the Cauliflower is tender, season with fresh thyme, salt & pepper.
  • I like to use an immersion blender to puree the soup.
  • You can also use a blender or food processor.
  • Just be sure to work in batches.
  • Stir in lemon juice and zest.
  • Serve hot!
