Ingredients
The following ingredients have 4 Servings
- 1 cauliflower (medium, about 2 lb)
- 1 tbsp sesame oil
- 1 garlic clove (minced)
- 1 tbsp fresh ginger (minced)
- 6 scallions, chopped (white and green parts)
- 2 eggs (large, beaten)
- 3 tbsp soy sauce
- 1 cup frozen peas & carrots
Instruction
- In a food processor fitting with a grating attachment, pulse cauliflower until it resembles rice
- core and coarsely chop cauliflower
- spray a wok or large pan with cooking spray.
- add sesame oil and heat over medium
- Add garlic, ginger, and the white part of scallions, and cook, stirring, about 3 minutes
- Add cauliflower "rice", peas and carrots, and soy sauce. Turn heat to medium-high, and cook, stirring, about 3 minutes.
- Make a well in the center and add the eggs, scrambling until cooked and stirring into the cauliflower.
- Remove from heat, and stir in green scallion pieces.
- Serve hot
