Ingredients

The following ingredients have 4 Servings
  • 1 cauliflower (medium, about 2 lb)
  • 1 tbsp sesame oil
  • 1 garlic clove (minced)
  • 1 tbsp fresh ginger (minced)
  • 6 scallions, chopped (white and green parts)
  • 2 eggs (large, beaten)
  • 3 tbsp soy sauce
  • 1 cup frozen peas & carrots

Instruction

  • In a food processor fitting with a grating attachment, pulse cauliflower until it resembles rice
  • core and coarsely chop cauliflower
  • spray a wok or large pan with cooking spray.
  • add sesame oil and heat over medium
  • Add garlic, ginger, and the white part of scallions, and cook, stirring, about 3 minutes
  • Add cauliflower "rice", peas and carrots, and soy sauce. Turn heat to medium-high, and cook, stirring, about 3 minutes.
  • Make a well in the center and add the eggs, scrambling until cooked and stirring into the cauliflower.
  • Remove from heat, and stir in green scallion pieces.
  • Serve hot
