Ingredients
The following ingredients have 4 Servings
- ½ head of cauliflower
- 1 Tbsp olive oil
- 2 bay leaves
- 3 tablespoons cilantro (finely chopped )
- 1 ½ tablespoons lime juice
- ¼ teaspoons salt
Instruction
- Grate your cauliflower into “rice” using either a box grater or the grating attachment of your food processor.
- Heat oil in a large skillet over medium heat. Add the cauliflower and bay leaves. Cover and cook for about 5 minutes, until the rice becomes slightly tender.
- Mix in chopped cilantro, lime juice, and salt. Serve warm or room temperature.
