Ingredients

The following ingredients have 4 Servings
  • ½ head of cauliflower
  • 1 Tbsp olive oil
  • 2 bay leaves
  • 3 tablespoons cilantro (finely chopped )
  • 1 ½ tablespoons lime juice
  • ¼ teaspoons salt

Instruction

  • Grate your cauliflower into “rice” using either a box grater or the grating attachment of your food processor.
  • Heat oil in a large skillet over medium heat. Add the cauliflower and bay leaves. Cover and cook for about 5 minutes, until the rice becomes slightly tender.
  • Mix in chopped cilantro, lime juice, and salt. Serve warm or room temperature.
