Ingredients

The following ingredients have 6 Servings
  • 1 head of cauliflower (large)
  • 2 tbsp canola oil (split in 2)
  • 4-5 shallots (peeled and minced)
  • 1/2 lb uncooked bacon (diced)
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 2 tsp Dijon mustard
  • 1/4 cup vegetable stock or broth
  • 6 oz grated Swiss cheese
  • 6 oz grated sharp Cheddar cheese
  • 4 tbsp Blue Cheese crumbled
  • 1/2-1 tsp coarse or sea salt (to taste)
  • 1/4-1/2 tsp fresh cracked pepper (to taste)
  • 2 tbsp butter (melted)
  • Bacon bits from above
  • 3/4 cup Panko bread crumbs

Instruction

  • Preheat the oven to 375­° and lightly grease an 8×8 casserole dish.
