Ingredients
The following ingredients have 6 Servings
- 1 head of cauliflower (large)
- 2 tbsp canola oil (split in 2)
- 4-5 shallots (peeled and minced)
- 1/2 lb uncooked bacon (diced)
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 2 tsp Dijon mustard
- 1/4 cup vegetable stock or broth
- 6 oz grated Swiss cheese
- 6 oz grated sharp Cheddar cheese
- 4 tbsp Blue Cheese crumbled
- 1/2-1 tsp coarse or sea salt (to taste)
- 1/4-1/2 tsp fresh cracked pepper (to taste)
- 2 tbsp butter (melted)
- Bacon bits from above
- 3/4 cup Panko bread crumbs
Instruction
- Preheat the oven to 375° and lightly grease an 8×8 casserole dish.
