Ingredients

The following ingredients have 4 Servings
  • 1 head cauliflower
  • 3 eggs
  • 1 cup of shredded cheddar or mozzarella cheese
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon each of salt and pepper
  • additional shredded cheese for cheesier topping

Instruction

  • Preheat oven to 425 degrees F
  • Cut cauliflower head into smaller pieces and pulse in a food processor. You want it to resemble rice.
  • Place in a microwave safe bowl, cover and microwave for 10 minutes.
  • Squeeze out as much water as possible using a cheesecloth.
  • Add all other ingredients to a large bowl and blend well.
  • Add cooked cauliflower to other mixed ingredients and mix well.
  • Line 2 baking sheets with parchment paper
  • Divide the cauliflower mixture in half and spread the baking sheets. I make mine into a rectangle shape. You want it to be thin.
  • Bake at 425 degrees F for 25 minutes.
  • If you'd like it a little extra cheesy, sprinkle with additional cheese and bake again until the cheese is melted.
