Ingredients

The following ingredients have 4 Servings
  • 1 tbsp Olive oil
  • 1 head Cauliflower (chopped)
  • 1 head Broccoli (chopped)
  • 1 Onion (diced)
  • 2 cloves Garlic clove (crushed)
  • 700 ml Vegetable stock
  • 300 ml Skimmed milk
  • 100 ml Single cream
  • 100 g Mature cheddar

Instruction

  • Put the oil in a large soup pan and once hot, add the onion and garlic and cook on a gentle heat for 3-4 minutes.
  • Add the cauliflower, broccoli and season.
  • Add the stock and bring to the boil. Simmer for 15 minutes.
  • Blend until smooth and then stir in the milk, cream and cheese.
