The following ingredients have 5 Servings
  • 6 – 8 bone in chicken thighs – with or without the skin
  • 1 cup raw cashews, lightly grilled, cooled and coarsely chopped in the food processor
  • 1 ½ cups all-purpose flour
  • 1 ½ cups bread crumbs – seasoned with salt, black pepper, paprika and dried oregano – about ½ tsp. each
  • 2 cups Pacific Foods Cashew Unsweetened Vanilla Non-Dairy Beverage
  • Honey for drizzling over the chicken when serving
  • 1 shallot – sliced thin
  • 1 tbs. butter
  • 1 – 2 tbs. olive oil
  • 2 cloves garlic – grated
  • Zest of 1 lemon
  • 2 ½ cups Pacific Foods Cashew Unsweetened Vanilla Non-Dairy Beverage
  • ½ cup raw cashews- lightly grilled and cooled and coarsely chopped in a food processor
  • 12 Shiitake mushrooms
  • ¾ tsp. salt
  • ½ tsp. ground black pepper
  • ¼ – ½ tsp. red pepper flakes – depending on how spicy your taste is
  • 1 tbs. lemon juice
  • 1 sprig of fresh rosemary
