Ingredients

The following ingredients have 6 Servings
  • 8 carrots large sliced
  • 3 onions chopped large
  • 1 tsp garlic minced
  • 2 cups Massel Vegetable Liquid Stock
  • 1 pinch salt and pepper
  • 1 handful parsley chopped *to taste

Instruction

  • Heat a small amount of oil in a large pot over medium heat.
  • Add onions, garlic and carrots.
  • Cook until onions are soft and carrots are cooked (about 10-15 minutes).
  • Add stock and cook over low heat for about 40 minutes.
  • Add pepper and salt to taste.
  • Puree in a food processor or blender (the soup should be quite thick).
  • To serve, garnish with parsley or coriander.
