Ingredients
The following ingredients have 6 Servings
- 8 carrots large sliced
- 3 onions chopped large
- 1 tsp garlic minced
- 2 cups Massel Vegetable Liquid Stock
- 1 pinch salt and pepper
- 1 handful parsley chopped *to taste
Instruction
- Heat a small amount of oil in a large pot over medium heat.
- Add onions, garlic and carrots.
- Cook until onions are soft and carrots are cooked (about 10-15 minutes).
- Add stock and cook over low heat for about 40 minutes.
- Add pepper and salt to taste.
- Puree in a food processor or blender (the soup should be quite thick).
- To serve, garnish with parsley or coriander.
