Ingredients

The following ingredients have 4 Servings
  • 2 cups carrots (coarsely grated )
  • ⅔ cup raisins
  • 1 cup crushed pineapple ( drained)
  • ⅓ cup mayonnaise ( or miracle whip)
  • 1 tbsp lemon juice
  • Pinch salt

Instruction

  • Toss raisins, carrots, and pineapple together lightly; set aside.
  • Stir together mayonnaise, lemon juice, and salt and add to the raisin mixture.
  • Refrigerate until served.
  • Best if made in advance and refrigerated at least an hour
