Ingredients
The following ingredients have 4 Servings
- 2 cups cooked quinoa
- 1 cup carrot (shredded)
- ½ cup red onions (chopped)
- 1 cup yellow bell pepper (chopped)
- ½ cup black olives (chopped)
- 2 tablespoons fresh parsley (chopped)
- 1/3 cup homemade vinaigrette dressing
- salt and ground fresh black pepper (to taste)
Instruction
- In a medium bowl, combine all ingredients, except the vinaigrette and mix together.
- Pour the vinaigrette over the salad and toss well.
- Taste to adjust the seasoning if necessary.
- It should be served at room temperature or cold.
