Ingredients

The following ingredients have 4 Servings
  • 2 cups cooked quinoa
  • 1 cup carrot (shredded)
  • ½ cup red onions (chopped)
  • 1 cup yellow bell pepper (chopped)
  • ½ cup black olives (chopped)
  • 2 tablespoons fresh parsley (chopped)
  • 1/3 cup homemade vinaigrette dressing
  • salt and ground fresh black pepper (to taste)

Instruction

  • In a medium bowl, combine all ingredients, except the vinaigrette and mix together.
  • Pour the vinaigrette over the salad and toss well.
  • Taste to adjust the seasoning if necessary.
  • It should be served at room temperature or cold.
