  • 1 inch piece ginger (finely grated)
  • 2 large garlic cloves (finely minced)
  • 1 teaspoon coconut oil
  • 1 medium red onion (thickly sliced)
  • 1 medium red pepper (thickly sliced)
  • 8 medium carrots
  • 2 cups bean sprouts
  • ½ cup roughly chopped cilantro
  • 1 handful peanuts (to serve)
