Ingredients

  • 1 cup shredded peeled carrot
  • ½ cup peanut oil, preferably roasted
  • 3 tablespoons white vinegar
  • 2 tablespoons pure maple syrup, dark or amber or agave nectar
  • 2 teaspoons miso paste *see ingredient note
  • 1 ½ teaspoons grated fresh ginger root
  • ¼ teaspoon salt
  • ¼ teaspoon white pepper

Instruction

  • Puree all ingredients in a blender on high, until smooth, about 30 seconds.
