Ingredients

The following ingredients have 6 Servings
  • 2 tbs olive oil
  • 1 brown onion diced large
  • 2 tbs fresh ginger grated
  • 500 g carrot peeled roughly chopped
  • 1 tbs honey mild
  • 1 lemon juiced
  • 400 ml boiling water
  • 40 g butter diced
  • 3 tbs fresh curly parsley chopped
  • 1 pinch salt and pepper *to taste

Instruction

  • Heat olive oil in a saucepan over a medium heat. Add onion and cook for approximately 5 minutes or until soft.
  • Add ginger, cook for a further 2 minutes. Stir well and then add the carrots, honey, lemon juice,salt and pepper. Stir.
  • Add the boiling water, then reduce to low and cook for 35 minutes.
  • Transfer the soup to a blender, drop in the diced butter, blend until smooth and creamy.
  • Reheat the soup when required. Serve in soup mugs and sprinkle with parsley.
