Ingredients
The following ingredients have 6 Servings
- 2 tbs olive oil
- 1 brown onion diced large
- 2 tbs fresh ginger grated
- 500 g carrot peeled roughly chopped
- 1 tbs honey mild
- 1 lemon juiced
- 400 ml boiling water
- 40 g butter diced
- 3 tbs fresh curly parsley chopped
- 1 pinch salt and pepper *to taste
Instruction
- Heat olive oil in a saucepan over a medium heat. Add onion and cook for approximately 5 minutes or until soft.
- Add ginger, cook for a further 2 minutes. Stir well and then add the carrots, honey, lemon juice,salt and pepper. Stir.
- Add the boiling water, then reduce to low and cook for 35 minutes.
- Transfer the soup to a blender, drop in the diced butter, blend until smooth and creamy.
- Reheat the soup when required. Serve in soup mugs and sprinkle with parsley.
