  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 TBSP ground cinnamon
  • 1 tsp ground ginger
  • 3/4 tsp salt
  • 14 oz granulated sugar ((2 cups))
  • 10 fl oz vegetable oil ((1.25 cups))
  • 4 eggs (large, at room temperature)
  • 1 tbsp vanilla extract
  • 14 oz shredded carrots ((4 cups), from 7-8 medium carrots)
  • 3 oz sweetened shredded coconut ((1 cup), sweetened or unsweetened)
  • 2 oz toasted pecans ((1/2 cup), coarsely chopped)
  • 6 egg whites (at room temperature)
  • 9.33 oz granulated sugar ((1 1/3 cups) )
  • 10 oz unsalted butter (cool but softened)
  • 1 lb cream cheese (cool but softened)
  • 1-2 tsp coconut extract ((to taste))
  • 2 oz powdered sugar ((1/2 cup), or more to taste)
  • 4 cups Flaked coconut
