Ingredients

The following ingredients have 4 Servings
  • 1/4 Cup softened butter
  • 1/3 Cup Sugar
  • 1/4 cup melted coconut oil
  • 1 Tablespoon molasses
  • 1 Tablespoon vanilla
  • 1 Egg
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 Cup flour
  • 1/3 Cup pecans
  • 1/2 Cup grated carrots
  • 4 oz softened cream cheese
  • 1/4 Cup softened butter
  • 1 teaspoon vanilla
  • 1 teaspoon orange zest
  • 1 1/2 Cups powdered sugar

Instruction

  • Preheat your oven to 350° and line a baking sheet with parchment paper
  • In a large mixing bowl, mix together your butter and sugar
  • Mix in your egg, vanilla, and molasses and coconut oil
  • Now mix in your baking powder, salt, cinnamon, and flour
  • Fold in your pecans and grated carrots
  • Use a ice cream scoop to scoop out your dough onto your baking sheet
  • Bake for 8-10 minutes, depending on the size of your cookies
  • Once your cookies are cooled, frost and top off with a few more pecans and enjoy!
