Ingredients

The following ingredients have 4 Servings
  • 1 (2-3) pound pork shoulder or butt
  • 1 tablespoon canola oil
  • 1 1/2 teaspoons salt + 1/2 teaspoon pepper
  • 1 tablespoon smoked paprika
  • 1/2 tablespoon cumin
  • 1 1/2 teaspoons onion powder
  • 2 teaspoons chipotle chili powder
  • 1 teaspoon oregano
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon garlic powder
  • 1 (12 ounce) Mexican beer
  • 1/2 cup orange juice
  • 2 limes (juiced)
  • 1-2 cups Carnitas
  • 1 ounce fire roasted tomatoes (lightly drained, 28 can)
  • 2-3 in chipotle chilies adobo (finely chopped (I used 3))
  • 2 tablespoons olive oil
  • 1 small onion (diced (optional, i left mine out))
  • 2 cloves garlic (minced or grated)
  • 1 1/2 cups low-sodium chicken broth
  • 8-16 ounce bag of tortilla chips
  • 1 cup grated monterey jack (pepper jack or cheddar cheese or a combo of all three)
  • 3-5 fried eggs
  • fruit salsa (sliced mango, sliced avocado, fresh cilantro + cotija cheese for topping)
  • 1/2 cup plain greek yogurt
  • 4 ounces cream cheese
  • 1 tablespoon honey
  • 2 Jalapeños (finely chopped and seeded if desired, or 1 large)
