Ingredients
The following ingredients have 4 Servings
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 2 tbsp curry powder
- 1/2 tsp cinnamon
- 1 large sweet potato, peeled and cut in small chunks
- 4 skinless chicken breasts, chopped into chunks
- 400g tin coconut milk
- 100g cherry tomatoes, whole
- to serve fresh coriander
Instruction
- Cook the onion and garlic in a tsp of oil for 5 minutes. Season, then stir in the curry powder and cinnamon. Cook for another minute, then add the potatoes and chicken.
- Pour in the coconut milk. Simmer for 10-12 minutes, then add the tomatoes and simmer for 2 minutes.
- Serve sprinkled with fresh coriander.
