Ingredients

The following ingredients have 4 Servings
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp curry powder
  • 1/2 tsp cinnamon
  • 1 large sweet potato, peeled and cut in small chunks
  • 4 skinless chicken breasts, chopped into chunks
  • 400g tin coconut milk
  • 100g cherry tomatoes, whole
  • to serve fresh coriander

Instruction

  • Cook the onion and garlic in a tsp of oil for 5 minutes. Season, then stir in the curry powder and cinnamon. Cook for another minute, then add the potatoes and chicken.
  • Pour in the coconut milk. Simmer for 10-12 minutes, then add the tomatoes and simmer for 2 minutes.
  • Serve sprinkled with fresh coriander.
