Ingredients
The following ingredients have 4 Servings
- 1 homemade pizza crust
- 2 Tablespoons olive oil
- 1 medium yellow onion (thinly sliced)
- 1 Tablespoon vegetable stock or water
- 1 1/2 Tablespoons olive oil
- 3 garlic cloves (minced)
- 1 Tablespoon fresh thyme (chopped)
- 1 small/medium sweet potato (thinly sliced)
- 6 ounces gruyere (shredded)
- 1 cup arugula
- 1/4 cup balsamic vinegar
Instruction
- Preheat oven to 450°F. Prepare homemade pizza crust according to the recipe, par-baking for 5 minutes. If using a pre-baked crust, prepare as directed.
- In a large skillet, heat olive oil over low-medium heat. Add sliced onions and cook for 15-20 minutes, only occasionally stirring, as they become golden. Add 1 Tablespoon stock/water/wine to deglaze the pan and keep onions moist. Continue to cook for 10-15 minutes until onions are a deep golden. Remove from heat, set aside.
- Mix together olive oil and minced garlic; brush across prepared pizza crust (I also brush some of the oil on the crust). Sprinkle thyme evenly across.
- Layer sliced sweet potatoes across the pizza, leaving an edge for the crust. Spread caramelized onions across the sweet potatoes. Add gruyere cheese evenly on top.
- Bake for 15-17 minutes until edges are golden brown and cheese is melted.
- As pizza bakes, place balsamic vinegar in a small saucepan over medium heat. Bring to a low simmer for 10 minutes, until thick. Remove from heat.
- Once the pizza is cooked, top with arugula and drizzle with balsamic reduction.
