  • 2 cups gingersnap crumbs (8 oz of cookies and pulse in a food processor)
  • 1/3 cup butter, melted
  • 3 8 oz cream cheese, softened
  • 1 cup sugar, divided
  • 3 eggs
  • 1 cup pumpkin puree
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 3 dashes ground cloves
  • 1 1/2 tsp vanilla extract
