Ingredients

The following ingredients have 4 Servings
  • 3 Tbsp. Instant Coffee Granules
  • 1 Tbsp. Boiling Water
  • 1/2 Cup Butter, Softened ((110g))
  • 1/2 Cup Brown Sugar ((90g))
  • 1/4 Cup Sugar ((50g))
  • 1 tsp Vanilla Extract
  • 1 Large Egg
  • 2 Cups All Purpose Flour ((240g))
  • 1/4 Cup Cocoa ((24g))
  • 1 tsp Baking Powder
  • 1/8 tsp Salt
  • 12 Pieces Caramel Filled Chocolate (Rolos, Caramello, etc).

Instruction

  • Preheat the oven to 180°C (350°F) and line a baking tray with baking paper and set aside.
  • Mix the instant coffee with the boiling water and set aside.
  • Beat the butter, brown sugar and sugar until light and fluffy. 
  • Add the egg, vanilla extract and coffee mixture and beat together. 
  • Add the flour, cocoa, baking powder and salt to the wet ingredients and beat until combined.
  • Flatten a small piece of cookie dough in your palm and place a piece of the caramel chocolate in the centre. Roll the dough around the piece of chocolate and place on the baking tray.
  • Bake for 10-12 minutes. They should have spread slightly but be soft to the touch.
  • Allow them to cool for 10 minutes on the baking tray before transferring to a wire rack.
  • You can eat these warm and melty or allow them to cool for a less melty middle.
