Ingredients
The following ingredients have 4 Servings
- 3 Tbsp. Instant Coffee Granules
- 1 Tbsp. Boiling Water
- 1/2 Cup Butter, Softened ((110g))
- 1/2 Cup Brown Sugar ((90g))
- 1/4 Cup Sugar ((50g))
- 1 tsp Vanilla Extract
- 1 Large Egg
- 2 Cups All Purpose Flour ((240g))
- 1/4 Cup Cocoa ((24g))
- 1 tsp Baking Powder
- 1/8 tsp Salt
- 12 Pieces Caramel Filled Chocolate (Rolos, Caramello, etc).
Instruction
- Preheat the oven to 180°C (350°F) and line a baking tray with baking paper and set aside.
- Mix the instant coffee with the boiling water and set aside.
- Beat the butter, brown sugar and sugar until light and fluffy.
- Add the egg, vanilla extract and coffee mixture and beat together.
- Add the flour, cocoa, baking powder and salt to the wet ingredients and beat until combined.
- Flatten a small piece of cookie dough in your palm and place a piece of the caramel chocolate in the centre. Roll the dough around the piece of chocolate and place on the baking tray.
- Bake for 10-12 minutes. They should have spread slightly but be soft to the touch.
- Allow them to cool for 10 minutes on the baking tray before transferring to a wire rack.
- You can eat these warm and melty or allow them to cool for a less melty middle.
