Ingredients
The following ingredients have 8 Servings
- 6 large apples (I used honey crisp peeled, cored, and sliced into 1/4” slices)
- 1 Tbsp fresh lemon juice
- 1/4 cup coconut sugar
- 1/4 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1 1/2 Tbsp tapioca flour (or arrowroot)
- 2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp fine sea salt
- 1 Tbsp Coconut oil or ghee ((if not vegan), solid and broken into pieces)
Instruction
- Preheat your oven to 350° F and spray a 9” pie dish or casserole dish with coconut oil or avocado oil spray.
- In a large bowl, toss the apples with the lemon juice, coconut sugar, maple syrup, tapioca or arrowroot, cinnamon, nutmeg and salt. Transfer to the prepared baking dish and dot with the coconut oil or ghee.
- Cover the dish and bake in the preheated oven for 35-40 minutes, uncover and stir, then continue to bake uncovered another 15 minutes until apples are soft and sauce is bubbling and caramelized. Allow to cool slightly then serve alone or with coconut vanilla ice cream or whipped cream. Enjoy! Store leftovers covered in the refrigerator for up to 4 days.
