Ingredients

The following ingredients have 4 Servings
  • 500 g (fillets) chicken thighs chopped into pieces
  • 1 tbs canola oil
  • 1 red onion sliced
  • 4 garlic clove sliced
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup fish sauce
  • 1 pinch ground black pepper

Instruction

  • Place the chicken and oil into a bowl and toss.
  • Place wok over high heat until hot and add the chicken. Cook chicken in two batches for 2 minutes on first side until lightly brown and 1 minute on the other side.
  • Remove chicken from pan and reduce heat to medium, then add the onion and garlic and cook for 5 minutes stirring occasionally.
  • Return the chicken to pan and add soy sauce and black pepper stirring to combine.
  • Cover wok, reduce heat to low and simmer for 10 minutes, stirring occasionally.
  • Increase heat to high, add sugar and stir, cook uncovered for a further 3 minutes until the sauce is rich, dark and syrupy.
  • Add fish sauce and stir to combine.
