Ingredients
The following ingredients have 4 Servings
- Capsicum (Bell Peppers) – ½ each (red, green & yellow)
- Eggs – 4
- Onion – 1 (finely chopped)
- Green Chilies – 4
- Salt – 3/4 tsp
- Crushed Black Pepper – 1 tsp
- Oil – 2 tbsp
- Mustard Seeds – 1 tsp
- Curry Leaves – few
Instruction
- Wash the bell peppers and chop it into small cubes. You can make this with just green capsicum or make it colourful with all coloured ones. Also, chop the onions and slit the green chilies finely.
- Crack the eggs in a bowl, beat it with salt and crushed black pepper and keep it ready.
- Heat oil in a kadai, splutter some mustard seeds and curry leaves. Add the chopped onions and saute for 1-2 minutes.
- Add the chopped capsicum and some salt. Cook for 2 minutes. Capsicum has lot of moisture and it cooks easily. The dish tastes good if the capsicum remains crunchy. So do not over cook.
- Spread the capsicum evenly and add the beaten eggs on top of this.
- After a minute, stir-fry together on medium high heat. Cook until all the moisture evaporates. Switch off and serve immediately.
