Ingredients

The following ingredients have 4 Servings
  • 200g (7oz) sugar
  • 200g (7oz) water
  • 150g (5oz) almond flour, toasted
  • 4 egg yolks, whisked
  • Lemon peel
  • Cinnamon stick
  • Orange peel
  • Coffee bean

Instruction

  • Prepare a syrup by placing the sugar, water, lemon peel, cinnamon, orange peel and coffee bean in a pan and bringing the mixture to 120°C (250°F). A thick syrup should have formed by now.
  • Remove the pan from the heat and let it cool down slightly.
  • Add the almond flour and egg yolks to the syrup and stir thoroughly.
  • Divide the dessert in equal portions in glasses or ramekins.
  • Leave to chill in refrigerator and serve when ready.
