Ingredients

The following ingredients have 4 Servings
  • 1 (15-ounce) can great northern beans, rinsed and drained
  • 1 tomato, chopped
  • 1/2 cup corn
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 4 (6-ounce) boneless, skinless chicken breasts
  • 1/4 cup reduced-fat, shredded, Monterey Jack cheese
  • 1 scallion, sliced

Instruction

  • Preheat grill to medium-high heat.
  • In a medium bowl, combine beans, tomato, corn, cumin, and chili powder; mix well. Place each chicken on a piece of foil, about 16- x 12-inches, and evenly divide bean mixture on top of chicken. Loosely fold foil over chicken and seal edges.
  • Place foil packets on grill and cook for 15-20 minutes, or until no longer pink in center.
  • Carefully open packets and sprinkle with cheese and scallion. Serve immediately.
