Ingredients
The following ingredients have 4 Servings
- 12 ounces campanelle
- 1 tablespoon olive oil
- 3 cloves garlic (minced)
- 12 ounces mushrooms (sliced)
- ¼ cup white wine (or chicken broth)
- 1 cup heavy cream
- ½ cup Havarti (or mozzarella, shredded)
- 3 tablespoons fresh parmesan cheese (divided)
- 1 teaspoon lemon zest
- 1 tablespoon fresh parsley (chopped optional)
Instruction
- Heat olive oil over medium high heat and cook garlic and mushrooms until mushrooms are tender.
- Stir in wine (or broth) and cook until wine has almost evaporated. Add heavy cream and simmer 5 minutes.
- Meanwhile, cook pasta according to package directions (do not rinse).
- Remove from heat and stir in mozzarella cheese, parmesan and lemon zest until smooth.
- Toss with pasta. Top with parsley and extra parmesan cheese if desired.
