Ingredients

The following ingredients have 4 Servings
  • 12 ounces campanelle
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 12 ounces mushrooms (sliced)
  • ¼ cup white wine (or chicken broth)
  • 1 cup heavy cream
  • ½ cup Havarti (or mozzarella, shredded)
  • 3 tablespoons fresh parmesan cheese (divided)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley (chopped optional)

Instruction

  • Heat olive oil over medium high heat and cook garlic and mushrooms until mushrooms are tender.
  • Stir in wine (or broth) and cook until wine has almost evaporated. Add heavy cream and simmer 5 minutes.
  • Meanwhile, cook pasta according to package directions (do not rinse).
  • Remove from heat and stir in mozzarella cheese, parmesan and lemon zest until smooth.
  • Toss with pasta. Top with parsley and extra parmesan cheese if desired.
