Ingredients

The following ingredients have 4 Servings
  • 1 dash olive oil
  • 24 ounces chicken sausage links (sliced into thin rounds)
  • 1 whole red bell pepper (seeded and diced small)
  • 1 whole onion (diced small)
  • 1 tablespoon Cajun seasoning
  • 1 pinch salt
  • 2 tablespoons tomato paste
  • 1 tablespoon chicken stock
  • 21 ounces frozen riced cauliflower

Instruction

  • Get out a large skillet with deep sides and heat the olive oil in it over medium high heat. Brown the sausage in it for about 4-5 minutes, then add in the pepper and onion. Let them get soft and fragrant for another couple of minutes while you season everything with the Cajun seasoning and salt. Then stir in the tomato paste and chicken stock and let it all simmer for another 5 minutes. Finally, just stir in the cauliflower rice and let it completely warm up and cook for 6-8 minutes while you keep stirring. Serve immediately and enjoy!!
