Ingredients
The following ingredients have 4 Servings
- 4 large Russet potatoes (peeled and sliced in long wedges for French fries)
- 2 tbsp. olive oil (or more if desired)
- 1/2 to 1 tsp. cajun seasoning (or more as desired)
- 1/2 to 1 tsp. parsley
Instruction
- Peel potatoes, slice in long wedges and place in cold ice water for ten minutes to soak.
- Spray a 10x14” glass baking dish with cooking spray.
- Pat potatoes dry with towel and spread into pan.
- Carefully sprinkle with Cajun seasoning – as much as you desire – a half to one teaspoon. Or, if you’re a big Cajun seasoning fan add more if you can handle the heat!
- Sprinkle with parsley.
- Bake at 350° about 30 minutes (covered or uncovered—mine were uncovered), and turn potatoes over with spatula.
- Sprinkle with more Cajun seasoning and parsley.
- Bake another 30 minutes or until potatoes are fork tender.
- If desired glaze with another tablespoon or two of olive oil.
