Ingredients

The following ingredients have 4 Servings
  • 3 cups corn kernels (fresh or frozen)
  • 1 tablespoons butter (salted or unsalted)
  • 1/2 cup chicken stock (use vegetable stock for a vegetarian recipe)
  • 2 teaspoons cajun seasoning
  • 1/4 teaspoon smoked paprika (or to taste)
  • 1/4 teaspoon cayenne pepper powder (or to taste)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon pepper (or to taste)

Instruction

  • Heat butter in a skillet over medium heat.
  • Once the butter is melted, add chicken stock, cajun seasoning, smoked paprika, and cayenne pepper powder, and mix well.
  • Add corn kernels, salt, and pepper and mix well.
  • Reduce the heat to low and cover the skillet with a lid.
  • Cook for 10-12 minutes until the corn is tender and most of the liquid is absorbed.
  • Check for salt and pepper and add more if needed.
  • Serve hot.
