Ingredients
The following ingredients have 4 Servings
- 2 tsp olive oil
- 1 lb chicken breasts (cut into 1/2 inch cubes)
- 2 tsp Cajun seasoning
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1 red bell pepper (diced)
- 1 small onion (diced)
- 4 cloves garlic (minced)
- 3 1/2 c chicken broth
- 1 lb pasta (rigatoni, penne or farfalle)
- 1 1/2 c fresh spinach (chopped)
- 2 oz cream cheese
- 2 c milk
- 1/3 c Parmesan cheese (grated)
Instruction
- Set a large pot or Dutch oven over medium heat, add olive oil.
- Season cubed chicken with Cajun seasoning, salt, pepper, paprika, and garlic powder.Add to the pan and brown on all sides
- Add bell pepper and onion, sauté for 1 minute, then add garlic. Saute for 30 seconds
- Pour in chicken broth and turn up heat. Bring to a boil, then add the pasta. Cover and simmer for 8-10 minutes, then add the spinach, milk, and cream cheese. Stir to combine, then let simmer, uncovered for 5 minutes. Let the m mixture thicken
- Add Parmesan cheese and toss to combine. Serve warm.
