Ingredients

The following ingredients have 4 Servings
  • 2 tsp olive oil
  • 1 lb chicken breasts (cut into 1/2 inch cubes)
  • 2 tsp Cajun seasoning
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1 red bell pepper (diced)
  • 1 small onion (diced)
  • 4 cloves garlic (minced)
  • 3 1/2 c chicken broth
  • 1 lb pasta (rigatoni, penne or farfalle)
  • 1 1/2 c fresh spinach (chopped)
  • 2 oz cream cheese
  • 2 c milk
  • 1/3 c Parmesan cheese (grated)

Instruction

  • Set a large pot or Dutch oven over medium heat, add olive oil.
  • Season cubed chicken with Cajun seasoning, salt, pepper, paprika, and garlic powder.Add to the pan and brown on all sides
  • Add bell pepper and onion, sauté for 1 minute, then add garlic. Saute for 30 seconds
  • Pour in chicken broth and turn up heat. Bring to a boil, then add the pasta. Cover and simmer for 8-10 minutes, then add the spinach, milk, and cream cheese. Stir to combine, then let simmer, uncovered for 5 minutes. Let the m mixture thicken
  • Add Parmesan cheese and toss to combine. Serve warm.
