Ingredients
The following ingredients have 4 Servings
- 1 tablespoon olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 1 cup carrots diced
- 4 cups cabbage chopped (approx. 1/4 head of cabbage)
- 1 cup green beans chopped in 1 inch pieces
- 1 whole bell peppers chopped
- 6 cups low sodium vegetable or chicken broth
- 1 1/2 teaspoon Italian seasoning
- 1/4 cup celery sliced
- pepper to taste
- 1 tablespoon parsley
Instruction
- Heat the olive oil in a large pot over medium heat. Add the onion, carrot and celery and cook for 4-5 minutes.
- Add the garlic to the pot and cook for 30 seconds. Add the red and green peppers, cabbage, Italian seasoning, salt, pepper and chicken broth to the pot.
- cook for 10-15 minutes or until vegetables are tender.
- Add the green beans and cook for an additional 5 minutes or until tender. Sprinkle with parsley, then serve.
