Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup carrots diced
  • 4 cups cabbage chopped (approx. 1/4 head of cabbage)
  • 1 cup green beans chopped in 1 inch pieces
  • 1 whole bell peppers chopped
  • 6 cups low sodium vegetable or chicken broth
  • 1 1/2 teaspoon Italian seasoning
  • 1/4 cup celery sliced
  • pepper to taste
  • 1 tablespoon parsley

Instruction

  • Heat the olive oil in a large pot over medium heat. Add the onion, carrot and celery and cook for 4-5 minutes.
  • Add the garlic to the pot and cook for 30 seconds. Add the red and green peppers, cabbage, Italian seasoning, salt, pepper and chicken broth to the pot.
  • cook for 10-15 minutes or until vegetables are tender.
  • Add the green beans and cook for an additional 5 minutes or until tender. Sprinkle with parsley, then serve.
