Ingredients

The following ingredients have 4 Servings
  • 2 Tbsps olive oil
  • 2 shallots (finely chopped)
  • 2 cloves garlic cloves (finely chopped)
  • 1 small Savoy cabbage (stem removed and coarsley shredded)
  • 1 Tbsp tomato puree
  • 2.5 cups vegetable stock
  • 1 cup canned chickpeas (drained and rinsed)
  • 2 tomatoes (finely chopped)
  • 1 tsp freshly grated ginger (peeled and grated)
  • 1 red chili pepper (deseeded and finely chopped)
  • 0.5 cup Parmesan (roughly grated)

Instruction

  • Heat the oil in a deep pan and fry the shallots and the garlic for a couple of minutes.
  • Add the cabbage and fry gently for about 2 minutes.
  • Stir in the tomato puree and the stock.
  • Add the chickpeas, tomatoes, ginger and chilli and simmer covered for 20 minutes, stirring occasionally.
  • Season with salt and pepper and serve with grated Parmesan.
