Ingredients
The following ingredients have 4 Servings
- 2 Tbsps olive oil
- 2 shallots (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 1 small Savoy cabbage (stem removed and coarsley shredded)
- 1 Tbsp tomato puree
- 2.5 cups vegetable stock
- 1 cup canned chickpeas (drained and rinsed)
- 2 tomatoes (finely chopped)
- 1 tsp freshly grated ginger (peeled and grated)
- 1 red chili pepper (deseeded and finely chopped)
- 0.5 cup Parmesan (roughly grated)
Instruction
- Heat the oil in a deep pan and fry the shallots and the garlic for a couple of minutes.
- Add the cabbage and fry gently for about 2 minutes.
- Stir in the tomato puree and the stock.
- Add the chickpeas, tomatoes, ginger and chilli and simmer covered for 20 minutes, stirring occasionally.
- Season with salt and pepper and serve with grated Parmesan.
