Ingredients
The following ingredients have 4 Servings
- 3 lb acorn squash
- 1/4 cup melted butter
- 1/3 cup light brown sugar
- 1/4 tsp kosher salt
Instruction
- Preheat the oven to 400°F. Cover a baking sheet with aluminum foil. Carefully cut the squash in half. Discard the seeds and strings. Place the squash on the baking sheet.
- In a small bowl combine the melted butter, brown sugar, and salt. Stir to combine.
- Using a pastry brush, spread the brown sugar mixture over the entire squash. You should use the entire brown sugar mixture. You'll notice in my pictures that I have a handful of the brown sugar mixture sitting in the middle of each squash.
- Place the squash in the oven for 45-50 minutes or until soft and tender. It's done when you can insert a fork into the meat with ease. Remove from the oven and allow it to cool for a few minutes. You can serve the squash as is, or you can scoop the meat out and add it to a serving bowl. Serve warm. Enjoy!
