Ingredients

The following ingredients have 3 Servings
  • 1/2 medium butternut squash, cut into thin french fry pieces
  • 1 tablespoon Pompeian Grapeseed Oil
  • 1 red bell pepper, thinly sliced
  • 3 large tortillas
  • 3 tablespoons pine nut hummus
  • 2 cups fresh spinach, stems removed
  • 1 avocado, sliced
  • 1/4 cup feta crumbles

Instruction

  • Preheat oven to 400 degrees F. Place butternut squash on a baking sheet and pour the grapeseed oil over it to coat all the pieces. Bake in the oven for 10 minutes and then remove. Add the bell pepper slices to the baking sheet and cook for an additional 5 minutes. Spread 1 tablespoon of hummus onto each tortilla. Then top with spinach, butternut squash, bell pepper, avocado and a few feta crumbles. Roll it up to enjoy.
