- 1/2 cup raw cashews, soaked overnight (unless using a high-speed blender)
- 3 1/2 cups filtered water, divided
- 1/2 teaspoon sea salt
- 1 cup polenta
- 2 tablespoons olive oil
- 3 cloves garlic, smashed, peeled, and roughly chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried parsley
- 1/4 teaspoon crushed red pepper flakes (optional)
- 4 cups heirloom cherry tomatoes or standard cherry tomatoes (2 pints)
- Sea salt, to taste
- Fresh basil, very thinly sliced
