The following ingredients have 4 Servings
  • 1/2 cup raw cashews, soaked overnight (unless using a high-speed blender)
  • 3 1/2 cups filtered water, divided
  • 1/2 teaspoon sea salt
  • 1 cup polenta
  • 2 tablespoons olive oil
  • 3 cloves garlic, smashed, peeled, and roughly chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 4 cups heirloom cherry tomatoes or standard cherry tomatoes (2 pints)
  • Sea salt, to taste
  • Fresh basil, very thinly sliced
