Ingredients

The following ingredients have 4 Servings
  • 8-10 chicken tenders or 2 large chicken breasts cut into strips
  • 1 1/2 cup all purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1 tablespoon adobo or Cajun seasonings
  • 2 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 tablespoon oregano
  • 1 tablespoon Paprika
  • 1 tablespoon Cayenne
  • Vegetable oil for frying
  • Wet ingredients
  • 1 cup whole fat buttermilk
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 1/2 stick unsalted butter
  • 1/2 cup Buffalo sauce
  • 1 tbsp vinegar
  • Ranch Dressing
  • 1 cup mayonnaise
  • 3/4 cup buttermilk
  • 1/4 cup sour cream
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 tablespoon finely chopped fresh parsley

Instruction

  • Whisk all dry ingredients together in a medium mixing bowl.
  • Whisk egg, buttermilk, 1/2 tsp pepper and 1/2 tsp garlic in a separate bowl.
  • Set up a wire rack to use as a drying station.
  • Coat chicken in buttermilk mixture. Then dredge in flour. Repeat.
  • Let chicken rest on wire rack for 10 mins. (Helps coating adhere to chicken and not fall off while frying.
  • Heat vegetable oil.
  • Fry in medium heat for 4-5 mins on each side until golden brown and crispy.
  • Drain excess oil.
  • Whisk all ingredients in a bowl.
  • Chill for 2 hours and store in airtight container.
