Ingredients

The following ingredients have 10 Servings
  • 1.5 cups cooked quinoa
  • 2 medium zucchini shredded (squeezed dry)
  • 1/3 cup Franks Red Hot
  • 6 oz cabot extra sharp cheddar cheese
  • 1 egg
  • 1 T garlic powder
  • 2 roasted green onions

Instruction

  • Pre-heat oven to 350F
  • While quinoa is cooking add all ingredients except for egg in large bowl. Add 1.5 cups HOT quinoa to the mix (so right after you finish cooking it so cheese will melt) and combine well. Add in 1 egg and mix till just combined.
  • Divide mix among 30 mini cups in a baking tin and bake for 45-55 minutes or until set. Let cool 10-15 minutes then serve!
