Ingredients

The following ingredients have 1 Servings
  • 4 slices sour dough sandwich bread
  • 4 slices mozzarella cheese
  • 1 medium tomato (thinly sliced)
  • 6-8 fresh basil leaves
  • 1/2 small red onion (thinly sliced)
  • 1-2 teaspoons balsamic vinegar
  • 2 tablespoons Parmesan cheese (shredded)
  • 1 tablespoons olive oil
  • salt and pepper (to taste)

Instruction

  • Preheat waffle iron. Lightly brush olive oil on one side of the bread slices.
  • Slice red onion and place in cold water for five minutes. Drain well.
  • Assemble the sandwiches by layering 2 slices of mozzarella cheese, 3-4 basil leaves, 2-3 slices tomato, and a few pieces of red onion on one slice of bread (not the side with the olive oil). Drizzle with 1 teaspoon balsamic vinegar. Season with salt and pepper to taste.
  • Place the loaded bread slice in the middle of the waffle iron. Sprinkle with 1 tablespoon Parmesan cheese and top with another bread slice, olive oil side up.
  • Close waffle iron lid and cook until lightly toasted and the cheese is melty. If desired, press lid down to compress sandwich while cooking.
