Ingredients

The following ingredients have 4 Servings
  • 8 oz Chickapea Pasta Shells
  • 5 medium tomatoes, diced
  • 2 large garlic cloves, finely chopped
  • 1/4 cup chopped basil
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • balsamic reduction, to garnish (optional)

Instruction

  • Cook Chickapea pasta according to the package directions, rinse with cold water immediately, and set aside.
  • Place the pasta and the rest of the ingredients into a large bowl and mix well.
  • Garnish with balsamic reduction if desired.
