Ingredients

The following ingredients have 4 Servings
  • 5 spears asparagus ((trimmed))
  • 5 sheets nori
  • 1 English seedless cucumber ((cut into long thin 6½ inch (16.5cm) strips))
  • 8 surimi fish sticks
  • Soy sauce (to serve)
  • Wasabi (to serve (optional))
  • Pickled ginger (to serve (optional))
  • 2 cups medium grain brown rice ((400g))
  • 3 cups water ((720ml))
  • 1 piece kombu ((wiped with damp paper towel) (about 2-in x 2-in square))
  • 6 tbsp rice vinegar
  • 3 tbsp sugar
  • 1½ tsp salt

Instruction

  • Cook asparagus in boiling water for 1 minute. Remove and rinse with cold water to stop the cooking. Drain and set aside.
