Ingredients
The following ingredients have 2 Servings
- 1/4 cup unsweetened coconut flakes
- 1 tsp sriracha powder seasoning
- 1 tbsp hemp seeds
- 1 cup unsweetened coconut milk ((tetra pack))
- 1/4 tsp salt
- Pinch of sugar
- 1 tsp lemon juice
- 2 cups cooked brown rice
- 1 1/2 cups kidney beans ((boiled/drained or canned and rinsed))
- 1/2 cup chopped red onion
- 1/2 cup chopped carrots
- 2 tbsp chopped fresh cilantro
Instruction
- In a blender combine all the ingredients of the dressing and blend it smooth.
- In a salad bowl combine all the salad ingredients.
- Toss in the dressing. Mix well. Adjust salt according to taste and enjoy!
