Ingredients

The following ingredients have 2 Servings
  • 1/4 cup unsweetened coconut flakes
  • 1 tsp sriracha powder seasoning
  • 1 tbsp hemp seeds
  • 1 cup unsweetened coconut milk ((tetra pack))
  • 1/4 tsp salt
  • Pinch of sugar
  • 1 tsp lemon juice
  • 2 cups cooked brown rice
  • 1 1/2 cups kidney beans ((boiled/drained or canned and rinsed))
  • 1/2 cup chopped red onion
  • 1/2 cup chopped carrots
  • 2 tbsp chopped fresh cilantro

Instruction

  • In a blender combine all the ingredients of the dressing and blend it smooth.
  • In a salad bowl combine all the salad ingredients.
  • Toss in the dressing. Mix well. Adjust salt according to taste and enjoy!
