Ingredients
The following ingredients have 6 Servings
- 4 cups basmati brown rice, (cooked)
- 2 cups garbanzo beans, (cooked)
- 1 small carrot, (grated)
- 1 stalk celery, (diced)
- ¼ cup Italian parsley, (chopped)
- ¼ cup fresh basil, (chopped)
- 3 Tbsp olive oil
- 3 Tbsp lemon juice, (freshly squeezed)
- 1 clove garlic, (minced, optional)
- ½ tsp salt
- 1 dash black pepper
- 2 stem scallions, (thinly sliced, white and green parts)
Instruction
- Add rice, garbanzo beans, carrots, celery, parsley, and basil to a large salad bowl.
- Toss all ingredients well to combine.
- Whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Drizzle dressing over salad ingredients and toss well to coat.
- Serve topped with sliced green onions, a squeeze of lemon, and extra chopped fresh herbs if desired.
