Ingredients

The following ingredients have 6 Servings
  • 4 cups basmati brown rice, (cooked)
  • 2 cups garbanzo beans, (cooked)
  • 1 small carrot, (grated)
  • 1 stalk celery, (diced)
  • ¼ cup Italian parsley, (chopped)
  • ¼ cup fresh basil, (chopped)
  • 3 Tbsp olive oil
  • 3 Tbsp lemon juice, (freshly squeezed)
  • 1 clove garlic, (minced, optional)
  • ½ tsp salt
  • 1 dash black pepper
  • 2 stem scallions, (thinly sliced, white and green parts)

Instruction

  • Add rice, garbanzo beans, carrots, celery, parsley, and basil to a large salad bowl.
  • Toss all ingredients well to combine.
  • Whisk together olive oil, lemon juice, garlic, salt, and pepper.
  • Drizzle dressing over salad ingredients and toss well to coat.
  • Serve topped with sliced green onions, a squeeze of lemon, and extra chopped fresh herbs if desired.
